Are you obsessed with salt & vinegar chips? Or salt & vinegar anything?
Do you snack all day, everyday? Same.
Here is a quick & easy “recipe” that is perfect for hot summer days:
Cucumbers (any kind and however many you want)
Olive oil
White vinegar
Garlic salt
Salt to taste if desired
Wash your cucumbers, peel them, cut them into about 1/2 inch slices, toss them into a big mixing bowl with olive oil, white vinegar and some garlic salt
(+ regular salt to taste if you're into that) and you’re done!
That's it! Literally takes 5 minutes.
I didn't measure anything and instead just played around with the ingredients until I found the perfect salt & vinegar balance. To each her own, ya know?
I love keeping these in the fridge as a go-to snack during the day. Anything that can be made in less than 10 minutes and eaten the next day is a win for me. Not to mention, they are a great swap for other savory, not-as-healthy snacks that many of us find ourselves binging on..usually around 2-3pm to be exact. They are perfect for tossing in a cooler or beach bag and kids love them, too!
** Fun fact, our sweet neighbor gave us a bunch of cucumbers right before I wrote this post, so I took it as a sign that someone might appreciate it. Thanks, Donna!
Enjoy!
