One of my favorite healthy-ish treat recipes!
These are sooo good! They are very filling, easy to make and are loaded with fiber, protein & healthy fats. I love making them ahead of time to store in the fridge for a quick grab & go snack for the days that I am busy and running around throughout the week! Plus, they are made with ingredients you’ll likely already have in your kitchen!
Recipe is as follows:
1 1/2 cups old fashioned rolled oats (sub gluten-free if you want)
1/2 cup chunky peanut butter (can use creamy instead)
1/4 cup Organic Blue Agave (can sub pure maple syrup)
1/3 cup semi-sweet chocolate chips
2 tablespoons chia seeds
2 tablespoons hemp seeds
1/2 teaspoon cinnamon
1 teaspoon pure vanilla extract
Pinch of Himalayan pink sea salt
Some add-ins/options that would make great additions:
** If you don’t want to use honey/maple syrup, sub for dates. Just remove the pits and use a food processor to grind them up beforehand.
** Flax meal (ground flax seed) and/or protein powder wouldn't be a bad idea, especially if you're looking to up your protein/fiber. Haven't tried either so can't confirm but I'm sure they would taste great!
** Make it easier & less messy by using a mini ice cream scooper to scoop mix to form your protein balls.
Mix everything together in a big bowl using a rubber spatula and then use your hands and roll into little balls — I would say about a tablespoon's worth or 1-2 inch. Place them into a Tupperware (I prefer the glass ones so they don’t stick) and store in the fridge for at least an hour before eating.
You can store them for about a week in the fridge and they are also freezer-friendly.
